Mr. Francisco Montabes and Mrs. Araceli Vañó are both descendants of an olive-growing family that has dedicated itself to olive cultivation and the oil industry since the late 18th century. In 1972, they purchased the historic Cortijo Virgen de los Milagros and founded Montabes Vañó SL, now known as Monva. Their extra virgin olive oil inherits the spirit of centuries-old oil-making techniques while maintaining consistent quality using the latest technology, upholding the traditions, experience, and values of their founders to this day.


Cortijo Virgen de los Milagros, the ancient region of Monva where premium extra virgin olive oil is produced, is located in Mancha Real, on the slopes of the Sierra Mágina mountain range. Olive trees have been cultivated there since Roman times. It has witnessed countless historical events and dynasties, and remains one of the oldest olive groves in the world today.


The entire olive grove supports over 90,000 olive trees. Monva's olive groves cover 650 hectares, benefiting from clayey calcareous soil that mitigates soft tremors. This makes cultivation and olive harvesting easier. Monva uses only its own olives, harvesting and pressing olive oil on its own estates. This allows them to adapt to different harvest seasons each year due to climate changes and to control the production process at any time, resulting in the highest quality olive oil.

Sierra Magina Natural Park

The Magina Mountains Nature Reserve covers 19,900 hectares and is located in the central part of the Sierra Magina county. Its highest point is Mágina summit, the highest peak in Jaén province, at 2,164 meters. This unique topography results in a rich and diverse landscape, including its distinctive and well-preserved ecosystem and endemic flora and fauna. This led to its designation as a Spanish National Nature Park in 1989 to protect its ecological environment.


 The Sierra Mágina, also known as the Sierra Mágina, boasts over 1,290 plant species, some of which are endemic and unique to this region. Its summits are home to the world's largest populations of *Alariariaf*, *Crepis granatensis*, and *Lithoda nitida*. Furthermore, its animal life is incredibly rich, with at least 240 recorded vertebrate species, some of which are endangered, such as the Spanish highland ibex or Iberian lynx. Among the 185 bird species that live permanently or seasonally on this land are rare golden eagles, white-bellied sea eagles, and others such as purple herons or mallards. Following closely behind are mammals, including 27 unique species of wild boar, bighorn sheep, foxes, weasels, and deer, as well as endangered species such as the Andalusian white goat or black-eyed sheep. There are also 25 unique reptile and amphibian species, such as the ringed lizard, making for a truly abundant collection!

The first step in producing extra virgin olive oil is harvesting the olives. In Monva, the harvesting process begins in the early stages of olive ripening, with the senses constantly working to find the optimal time. We pick the olives directly from the tree, ensuring the fruit doesn't touch the ground to guarantee cleanliness and quality. The timing of the harvest is crucial, directly impacting the oil's quality: harvesting must only begin once the ripening process is complete, but once ripe, it cannot be delayed. Deciding on the harvest day tests expertise and experience.


Once harvested, olives are immediately transported to the olive oil mill located on the estate, ensuring the healthy fruit remains in perfect condition without any impact or tearing to the skin. Monva's olive oil mill is situated on the estate, minimizing transit time and guaranteeing the quality of the oil.


We clean and select olives according to the quality of each type. The cleaned and pre-selected olives then undergo proper cold pressing to preserve their rich sensory qualities. This process, called milling, must be carried out very carefully to ensure taste and quality. For this, it is absolutely essential to maintain the temperature below 27 degrees Celsius. After inspecting the oil's quality, it is stored in cellars in preparation for later bottling. EU Certificate of Origin

The primary function of Designation of Origin (DO) certification is to confirm that the oils produced and bottled by registered entities meet the standards of "Quality Standard EN45011" in terms of origin and quality. This encompasses all stages of the process, from pruning, fertilization, and irrigation to olive harvesting, oil extraction, cellar storage, and bottling, all of which must be strictly controlled by a professional technical team. The Designation of Origin Regulatory Council certifies the origin and quality of oils produced in Monva and proves that they meet the requirements stipulated in the Comprehensive Production Regulation. Furthermore, it guarantees that all bottled oils with quality seals are free of chemicals. The Andalusian government recognized the Sierra Magina Denomination of Origin in November 1995, and the European Union approved the designation in 1999. Fats are essential nutrients that provide energy and are also necessary elements for maintaining cells and intracellular structures.


Extra virgin olive oil contains approximately 80% oleic acid, which can lower LDL cholesterol ("bad" cholesterol) levels in the blood while increasing HDL cholesterol ("good" cholesterol) levels, reducing the risk of atherosclerosis and other cardiovascular diseases. The remaining 20% consists of 8% linoleic acid (Omega 6). One of its functions is to maintain the normal function of the immune system, as well as the formation of cell membranes and neurons. Furthermore, it is a natural vasodilator, anticoagulant, and anti-inflammatory agent.


Based on their saturation level, fatty acids are classified into saturated fatty acids (i.e., fatty acids from animal sources, such as butter, and certain vegetable oils such as coconut or palm oil) or unsaturated fatty acids. The latter are dominant in extra virgin olive oil and offer numerous health benefits. In terms of health, the main difference between saturated and unsaturated fatty acids lies in the types of cholesterol they increase.
